Recipe of the Week

Pineapple Cobbler

I got this recipe from an online friend. I made it for Easter and it was good enough for me to add it to my recipe box. It doesn't call for a bunch of ingredients and it's easy!

1 stick butter (melted)
1 cup sugar
4 eggs
20 oz. can of pineapple tidbits (do not drain)
7 slices day old white bread, cubed - I laid mine on a big plate that morning and let it sit out until it wasn't so squishy. Or you can *slightly* toast it in the oven.

Preheat oven to 350. Melt butter in a large bowl, mix in sugar and eggs. Add pineapple - do not drain - and stir. Mix in bread cubes. Put in 9x9 dish, bake for 45 minutes. Goes well with ham or as a dessert with ice cream.
