Food Friday-Turkey & Ro-Tel Casserole

Greetings! I hope everyone had a great Thanksgiving. I needed to reinvent my Thanksgiving leftovers so I made this casserole last night. Recipe is from my Granny Jean who lives in Florida. Like all her meals, it tastes wonderful!

Turkey/Chicken & Ro-Tel Casserole
leftover turkey or chicken, cut into bite size pieces
spaghetti
butter
onion (as much/little as you want)
1 can mushrooms or fresh mushrooms, sliced
1 can mushroom soup
1 can Ro-Tel tomatoes and peppers (hot or mild, your choice)
cheddar cheese

Preheat oven to 350. Cut up turkey/chicken into pieces and set aside. Boil spaghetti noodles. Meanwhile, melt a pat of butter in a skillet and saute the onion and mushrooms until tender. Mix in the mushroom soup and Ro-Tel tomatoes, mix well. Drain the spaghetti and place in casserole dish. Pour soup mixture over pasta then add the turkey pieces. Sprinkle cheese over everything. Place in oven and bake until cheese is melted.
